UK leagues?
The 'National Ice-Hockey League' in the UK is split into 2 divisions of mostly amateur teams, then there is the Premier League and Elite League above that.
After that maybe a job in a European league and look at moving on from there?
Word is you'll struggle to reach the NHL depending on your nationality though.
And usually helps to take an international-coaching job as well early doors, or you could be trolling the lower-leagues for some time.

Some guys have put American or Canadian as their 'second' nationality to help them, don't know if that works though!

Big QFT, make sure to make yourself part-Canadian/American if you want to get to the NHL, else it'll get REAAAAAAAAALLLY hard even if you have the right reputation.
The NIHL is a fun suggestion like Mark said, I also did a Swiss game in the NLB (feeds into the NLA) for a bunch of seasons and that was pretty challenging too.
