What are the Asterix's (*) next to players names when you are looking at your roster?

I think they're the ones your players most respect. In other words: captain material.
Never confirmed this from any official source though, so I might be wrong. But that's how it looks to me.

Is it not the players with the highest reputation in the team? I'm sure I've seen the answer before but it always been something that I've never really paid attention to - although it can be handy if you're starting out with a team of players you know little about.

Well it seems to change quite often. My back-up net minder had one recently and he was quite poor and hadn't played a game all season.

Highest rep sounds the most plausible to me.

as far as I know it is the top 3 star players on your team. Thats what I was told long ago.

They are indeed, heavily slanted towards reputation (as you'd expect)

I can't find the post anymore, but you're correct. The stars represent the fan favorites. Don't believe me, let one go FA or put one in a trade that isn't lopsided in your favor and listen to the fans burning you in effigy (ala Peter Pocklington)
