1/ If a 5 foot tall guy goes up against someone who is 6 foot 6 and weights heavier than his opponent do these factors actually come into play in the fights?
2/ Also does it come into play with checking etc and frequency of injuring others?
3/ Another question is, if a player wins a fight does that team get a morale boost?
4/ What is the best way to keep an opposing star playing from playing well, is it just done from getting a enforcer to check them?

Height and weight definitely come into play with hitting and overall form. There are definite advantages to taller and heavier players, especially when it comes to physical play and fights.
In my experience, winning fights can definitely turn the tide for your team.
In my opinion, there's two methods to containing star opposition forwards. 1) Fight fire with fire and put your best players up against them and out score them. 2) Use your best defensive forwards (high checking/positioning/poke), set line matching and set individual tactics to check the player/s you want to target. I don't think enforcers are very good for this.
Backchecking is simply coming back to check in your own defensive zone. It's a term used mostly to describe forwards coming back and checking. If you set a player to backcheck hard, he will often go into the corners, dig for pucks and defend voraciously. If you set it to easy, he won't go hard in the defensive zone and will have a mindset to hope for turnovers and start breakouts going the other way.
