Hello,
I searched the forums for this but wasnt able to find anything, but do staff salaries count towards your salary cap, or have any influence in the actual finances of the game?

Not to cap. Only players. They do count in terms of the amount of profit or loss you make during the season, as they add into your expenses. However...I have never had any issues in the game with my job because of how much I pay staff. The amount you are allowed to offer them is always within the realm of the budget of the team.
